Ingredients
- 3 bell peppers, sliced
- 4 Italian chicken sausages (I used Trader Joe’s)
- ½ onion, sliced
- 1 cup rice (white or brown)
Sauce
- 2 tbsp olive oil
- 1 tbsp Italian seasoning
- 1 tsp salt and pepper (I use Kinder's the Blend)
- 1 heaping tbsp minced garlic
Instructions
- Cook the rice: Rinse 1 cup of rice and cook according to package instructions. This will make about 3 cups of cooked rice.
- Preheat the oven to 400°F (200°C).
- Prepare the veggies and sausage: Slice the bell peppers and onion. Cut the Italian chicken sausages into bite-sized pieces.
- Mix the sauce: In a small bowl, combine the olive oil, Italian seasoning, salt, pepper, and minced garlic.
- Toss everything together: On a large sheet pan, spread out the sliced veggies and sausage. Drizzle the sauce over the top and toss everything to coat evenly.
- Bake for 35-40 minutes, or until the sausages are fully cooked and the veggies are tender. For an extra crispy finish, broil for the last 2 minutes.
- Serve: Divide into 4 portions and serve over the cooked rice.
