If you're looking for an easy, healthy lunch meal prep, this sheet pan dinner is perfect! Packed with flavorful Italian chicken sausage, colorful veggies, and served over rice, it's a simple and delicious option. Makes 4 servings.

Ingredients

  • 3 bell peppers, sliced
  • 4 Italian chicken sausages (I used Trader Joe’s)
  • ½ onion, sliced
  • 1 cup rice (white or brown)
Sauce
  • 2 tbsp olive oil
  • 1 tbsp Italian seasoning
  • 1 tsp salt and pepper (I use Kinder's the Blend)
  • 1 heaping tbsp minced garlic

Instructions

  1. Cook the rice: Rinse 1 cup of rice and cook according to package instructions. This will make about 3 cups of cooked rice.
  2. Preheat the oven to 400°F (200°C).
  3. Prepare the veggies and sausage: Slice the bell peppers and onion. Cut the Italian chicken sausages into bite-sized pieces.
  4. Mix the sauce: In a small bowl, combine the olive oil, Italian seasoning, salt, pepper, and minced garlic.
  5. Toss everything together: On a large sheet pan, spread out the sliced veggies and sausage. Drizzle the sauce over the top and toss everything to coat evenly.
  6. Bake for 35-40 minutes, or until the sausages are fully cooked and the veggies are tender. For an extra crispy finish, broil for the last 2 minutes.
  7. Serve: Divide into 4 portions and serve over the cooked rice.
