- 1 lb lean ground beef
- 1 yellow onion, diced small
- 3 cloves garlic, minced
- 2 tbsp tomato paste
- 24 oz jar marinara sauce
- 6 cups chicken broth (or 2 tbsp Better Than Bouillon + 6 cups water)
- 2 tsp parsley
- ½ tsp oregano
- 1 tsp basil
- Salt & pepper, to taste
- 9 lasagna noodles, broken into bite-sized pieces
- 2 cups fresh spinach
- 2 tbsp ricotta (or cottage cheese)
- 2 tbsp mozzarella
- 1 tbsp parmesan
- Optional: fresh basil for garnish
Instructions
- Cook the beef + onion: In a large pot, brown ground beef and onion together over medium heat (5–6 minutes). Add garlic during the last minute. Drain excess fat if needed.
- Build the soup: Stir in tomato paste, marinara sauce, broth, parsley, oregano, basil, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15 minutes.
- Cook the noodles: Add broken lasagna noodles directly into the pot. Keep at a strong simmer, stirring occasionally, until noodles are tender (12–14 minutes).
- Add spinach: Stir in spinach and cook until just wilted (about 2 minutes).
- Top and serve: Mix ricotta, mozzarella, and parmesan in a small bowl. Add a spoonful to each serving so it melts into the soup. Garnish with fresh basil if desired.
