Ingredients

Soup Base
  • 1 lb lean ground beef
  • 1 yellow onion, diced small
  • 3 cloves garlic, minced
  • 2 tbsp tomato paste
  • 24 oz jar marinara sauce
  • 6 cups chicken broth (or 2 tbsp Better Than Bouillon + 6 cups water)
  • 2 tsp parsley
  • ½ tsp oregano
  • 1 tsp basil
  • Salt & pepper, to taste
  • 9 lasagna noodles, broken into bite-sized pieces
  • 2 cups fresh spinach
Topping (per serving) - make them before serving
  • 2 tbsp ricotta (or cottage cheese)
  • 2 tbsp mozzarella
  • 1 tbsp parmesan
  • Optional: fresh basil for garnish

Instructions

  1. Cook the beef + onion: In a large pot, brown ground beef and onion together over medium heat (5–6 minutes). Add garlic during the last minute. Drain excess fat if needed.
  2. Build the soup: Stir in tomato paste, marinara sauce, broth, parsley, oregano, basil, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15 minutes.
  3. Cook the noodles: Add broken lasagna noodles directly into the pot. Keep at a strong simmer, stirring occasionally, until noodles are tender (12–14 minutes).
  4. Add spinach: Stir in spinach and cook until just wilted (about 2 minutes).
  5. Top and serve: Mix ricotta, mozzarella, and parmesan in a small bowl. Add a spoonful to each serving so it melts into the soup. Garnish with fresh basil if desired.

  • Fridge: Store soup (without topping) in an airtight container for up to 4 days. Add cheese topping fresh when reheating.
  • Freezer: Freeze in portions without noodles for up to 2 months. Add freshly cooked noodles when reheating for best texture.
