Ingredients
- 1 pound lean ground beef
- 1 yellow onion, chopped
- 3 cloves garlic, minced
- 2 tbsp tomato paste
- 24 oz marinara sauce (I used Rao’s)
- 2 tsp dried parsley
- 1/2 tsp dried oregano
- 1 tsp dried basil
- Salt & pepper, to taste
- 6 cups low-sodium chicken broth (I used 2 tbsp Better Than Bouillon with 6 cups water)
- 9 lasagna noodles, broken into pieces
- 2 cups fresh spinach
Topping
- 2 tbsp low-fat ricotta (or try cottage cheese for more protein)
- 2 tbsp low-fat mozzarella
- 1 tbsp fresh parmesan cheese
Instructions
- Cook the beef: In a skillet, brown the ground beef. Transfer to a crockpot.
- Add ingredients: Combine the onion, garlic, tomato paste, marinara sauce, seasonings, and chicken broth (or water with bouillon) in the crockpot. Stir well.
- Cook: Set the crockpot to high and cook for 3 hours.
- Add noodles & spinach: After 3 hours, add broken lasagna noodles and spinach to the crockpot. Cook for an additional hour.
- Serve with cheese: In a small bowl, mix ricotta, mozzarella, and parmesan per serving. Form into a small ball and place it on top of each soup serving. Garnish with fresh basil.
