Ingredients

  • 1 lb lean ground beef (91% lean used here, or try turkey or chicken)
  • 1 medium onion, diced
  • 2 cans kidney or red beans, drained and rinsed
  • 2 (15 oz) cans crushed tomatoes
  • 2 cups water
  • 2 cups corn (frozen or canned)
  • 1 packet taco seasoning
  • Salt and pepper, to taste
Toppings
  • Shredded cheese
  • Sour cream or Greek yogurt
  • Crushed tortilla chips (Fritos are a personal favorite!)
  • Salsa
  • Diced avocado

Instructions

  1. In a large pot, brown the ground beef over medium heat, breaking it into crumbles as it cooks. Add the diced onion and sauté until softened.
