Ingredients

  • 1/2 cup protein pancake mix (I recommend Clean Simple Eats, and you can use code Meagan10 for a discount)
  • 1/3 cup milk (I use Fairlife skim)
  • 1 egg
  • 1/3 - 1/2 cup pumpkin puree
  • Pumpkin pie spice, to taste
  • A few Lily's white chocolate chips

Instructions

  1. Mix it up: In a microwave-safe mug, combine the pancake mix, milk, egg, pumpkin puree, and pumpkin pie spice. Stir until smooth.
  2. Add chocolate chips: Sprinkle a few chocolate chips on top for a touch of sweetness.
  3. Microwave: Cook in the microwave for 3 to 3 1/2 minutes. Let it sit for about 1 minute before enjoying.
  4. Top & Serve: Drizzle with sugar-free syrup and add a dollop of sugar-free Reddi Whip.
