- 1/3 cup milk (I use Fairlife skim)
- 1 egg
- 1/3 - 1/2 cup pumpkin puree
- Pumpkin pie spice, to taste
- A few Lily's white chocolate chips
Instructions
- Mix it up: In a microwave-safe mug, combine the pancake mix, milk, egg, pumpkin puree, and pumpkin pie spice. Stir until smooth.
- Add chocolate chips: Sprinkle a few chocolate chips on top for a touch of sweetness.
- Microwave: Cook in the microwave for 3 to 3 1/2 minutes. Let it sit for about 1 minute before enjoying.
- Top & Serve: Drizzle with sugar-free syrup and add a dollop of sugar-free Reddi Whip.
