Ingredients

  • 1 to 1.5 pounds chicken breast, cubed
  • 1 pound Yukon gold potatoes, cut into ½-inch cubes (About 5 potatoes)
  • 1 (12-ounce) bag green beans
  • 4 tablespoons melted light butter (I recommend Land O’ Lakes)
  • 2 teaspoons salt
  • 2 teaspoons dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried parsley
  • ½ teaspoon dried basil
  • ½ teaspoon black pepper

Instructions

  1. Preheat the oven: Set to 375°F. Line a large baking sheet with parchment paper or lightly spray with cooking spray.
  2. Bake the potatoes first: Spread the cubed potatoes evenly onto the sheet pan. Drizzle with half of the melted butter and sprinkle with half of the seasoning mixture. Toss to coat. Bake in the preheated oven for 10 minutes.
  3. Add the chicken and green beans: Remove the sheet pan from the oven and add the cubed chicken and green beans. Drizzle the remaining melted butter over everything and sprinkle on the rest of the seasoning. Toss gently to coat.
  4. Finish baking: Return the sheet pan to the oven and bake for an additional 25-30 minutes, or until the chicken is cooked through (165°F internal temperature) and the potatoes are tender.
  5. Stir halfway through cooking to ensure even browning.
  6. Serve and enjoy: Plate up this cozy, wholesome meal and enjoy a balanced dinner with minimal fuss!

Notes

  • Add a squeeze of fresh lemon juice or a sprinkle of parmesan cheese before serving for extra flavor.
  • For even crispier potatoes, broil for the last 2-3 minutes.
