Ingredients
- 1–2 cups fresh spinach (it cooks down significantly)
- Sundried tomatoes, without oil or patted dry
- 1 clove garlic, minced
- 150g egg whites
- 1 carb-balance burrito-sized tortilla
- 1/4 cup reduced-fat feta cheese
- 1 light Laughing Cow cheese wedge
- Optional: Drizzle of hot honey on top (I used 10g for a bit of sweetness)
Instructions
- Cook the filling: In a skillet over medium heat, sauté the spinach, sundried tomatoes, and minced garlic until the spinach is wilted and tomatoes are softened.
- Add egg whites: Pour in the egg whites and cook until set, stirring occasionally.
- Assemble the wrap: Spread the Laughing Cow cheese over the tortilla. Add the spinach and egg white mixture, then sprinkle with feta.
- Finish and serve: Roll up the tortilla tightly and place back on the skillet and grill. If desired, drizzle with hot honey for an extra kick of flavor.
