This Fall Harvest Bowl combines roasted chicken sausage, sweet potatoes, Brussels sprouts, onions, and apples into one delicious sheet pan dinner. It’s the perfect option for quick and simple meals, an easy high protein dinner, or even meal prep for the week.

Ingredients

  • 2 packs apple chicken sausage (I'm using Dietz & Watson -- they're so good)
  • 1 lb Brussels sprouts
  • 1 lb sweet potato
  • 1 red onion
  • 1 honey crisp apple
  • ½–1 tbsp olive oil
  • 1–2 tbsp honey
  • 1 tsp minced garlic
  • Salt, to taste
  • ¼ cup freshly grated Parmesan cheese (for topping)

Instructions

  1. Preheat oven to 425°F.
  2. Prep the ingredients: Chop sausage, vegetables, and apple into bite-sized pieces. Spread everything evenly on a large sheet pan.
  3. Season: Drizzle with olive oil and honey, sprinkle with garlic and salt. Toss to coat. (Tip: if you’re tracking calories, weigh your oil container before and after pouring to log accurately.)
  4. Bake: Roast for 25 minutes. For extra crispness, switch to broil for 3 minutes at the end.
  5. Finish & serve: Sprinkle with Parmesan cheese and enjoy warm.
